Sopa de Fideo

The soup that fixed everything. Sick? Sopa de fideo. Bad day at school? Sopa de fideo. Cold outside? You already know. Mom made this almost every week and it never got old.

Ingredientes

  • 1 package Fideo pasta (thin vermicelli)
  • 2 Roma tomatoes
  • 1/4 White onion
  • 2 cloves Garlic
  • 4 cups Chicken broth
  • 2 tbsp Oil
  • Salt, lime, cilantro to serve

Pasos

  1. Toast the fideo in oil over medium heat, stirring constantly until golden brown. Be careful — it burns fast.
  2. Blend tomatoes, onion, and garlic with a little water until smooth.
  3. Pour the tomato sauce into the pot with the toasted fideo. It will sizzle. Stir well.
  4. Add chicken broth, bring to a boil, then reduce to a simmer. Cook 8-10 minutes until pasta is tender.
  5. Serve with a squeeze of lime and fresh cilantro.
